Local roasters are the heart of the specialty coffee community. We’re not just roasting beans; we’re cultivating relationships, making intentional choices, and rethinking what responsible coffee consumption looks like in 2025.

We drink coffee every day, often without considering where that money goes. Choosing specialty coffee from local roasters is a simple way to create a positive impact on your neighborhood community, the local economy, and the environment.

The third wave of coffee reshaped how we think about quality, traceability, and sustainability. While bigger brands have leaned into the trend, small-batch roasters like us stay grounded in what matters: not scale, but substance.
Sustainability: Beyond the Buzzword
It’s no secret that the coffee industry has a sustainability problem. From carbon emissions to exploitative labor practices, the global supply chain is complex and often inequitable. But local, independent roasters are in a unique position to push back.
At Café Binocle, for instance, we roast in the heart of Montreal’s Mile End using a fully electric roaster,powered by Hydro-Québec, of course. Our operation is carbon neutral, not as a marketing ploy, but because we believe climate responsibility should be embedded in our everyday routine. We also deliver over 95% of our coffee via bike courier across the island. It’s a small effort, but for us, it’s a non-negotiable part of how we define sustainability.
We’re a team of just two people, roasting in small batches, working directly with importers, and choosing coffees from producers who are paid fairly and who farm with future generations in mind. And no, you won’t find our coffee in big-box stores or on supermarket shelves. That’s intentional. We’re the small roastery that wanted to stay small.

Buying locally is about more than convenience, it’s about knowing the story behind the beans in your cup. Who grew them? Who roasted them? These questions matter not just to industry insiders, but to anyone who values quality, ethics, and a healthier planet.

Earlier this year, Café Binocle was honored to receive the Roaster of the Year – Rising Star award from Th3rdwave, a moment that reminded us how much can be done with just a little equipment, a lot of care, and a strong community. For us, it’s not about roasting the most coffee, it's about doing it the right way.
