Brayan, a producer from Acevedo, a municipality of Huila, Colombia, specifically in San Adolfo, is a rural coffee-growing region and one of the largest coffee-producing regions. His father taught him all the virtues and knowledge the land offers us, giving us the tools to be able to work in the future. Since he was 13, his father would take him after school to teach him everything about coffee, which, years later, made him realize that it was his passion and what he wanted to do when he grew up. This year, he launched a project with more than 60 coffee producers, including his family, who harvest and sell their coffee at a better price for the cherries, an arduous job since they carry out the harvest themselves throughout the municipality. Finally, in collaboration with the Forest and Ancla processing plant, we process them with a fruity fermentation, which allows us to obtain unique profiles.

Then, a 24-hour cherry aerobics session—yes, our beans stay in shape! After the pulping party, it's time to kick it up a notch with dehydrated and ground fruit, turning up the flavor volume for a 5-day anaerobic fiesta. To top it all off, we let them soak in flavor love for 10 days mechanically, with a 5-day break to lock in all those savory vibes. It's not just coffee; it's a flavor marathon! ☕🏃♂️🍇
