Our Chimaki is back. This time, it will surprise you with its notes of peach, honey, and a hint of green apple. This exceptional coffee comes from coffee trees at very high altitudes, 1950m to 2050m. At such high altitudes, we know it's ideal for producing dense and sweet coffee cherries.
You'll get the most out of its complexity with the filter method. If you're more of an espresso drinker, be sure to adjust your grind to ensure proper extraction.
Most Ethiopian producers are smallholders who use traditional methods to grow plants, often wild coffee in backyard "gardens" where lots are usually organic by default.
The red cherries in this batch were selectively hand-picked and delivered to the Yirgacheffe Werka Chelchele Station for careful sorting. The cherries are then pulped and washed in clean water, soaked in clean water for 36 to 48 hours before being placed on drying beds to dry until the moisture content drops to 11.5%. This process takes 7 to 10 days, depending on the
