We left with a washed grain from Colombia... and then we skidded
The idea behind this new "Barriqué" was to play with fruit and fermentation. Because we love trying things out at TorQué.
We started by pureeing a lot of pineapple, which we then mixed with green coffee. Then, we added a special ingredient to the recipe: a little yeast specially designed to create coffees… that your grandparents probably wouldn't like.
After fermentation, the bean absorbed the mash and the yeast did its work. The coffee was left to dry slowly, then roasted to your liking.
