Our funkiest coffee yet: a 96-hour anaerobic natural Pacas.
Gualvador Estate is a farm located directly on the border of Guatemala and El Salvador, in the Nuevo Oriente region. Situated at the foot of the El Chingo volcano, the farm not only offers panoramic views but also nutrient-rich soil thanks to previous volcanic eruptions. Jaime Rios, a third-generation farmer, is the current owner.
This coffee undergoes 96 hours of anaerobic fermentation, giving it a unique aroma reminiscent of natural wine. Viny, raisin, cherry, and Pinot Noir. You'll find a very juicy brew with vibrant acidity. The finish is sweet and persistent, but also clean .
Recommended preparation: espresso, pour-over.
