The Foundation is our signature espresso. It's a medium roast where balance and sweetness are the main targets. Currently, it's made with a batch of red bourbon grown by Luis José Valdez in Caldas, Colombia, and a batch of Nova Resende in Minas Gerais, Brazil. When properly adjusted, you'll get a great balance between sweet acidity and cocoa bitters.
