This is NOT your average decaf. But then again, none of the decaffeinated coffees we supply are. However, this one holds a special place in our hearts. Previously, when we were looking into why decaf coffee was so difficult to master, we found some fantastically processed decafs, but we also realized that certain conditions absolutely had to be met every time.
First - It had to be a great coffee to begin with, not just one that didn't work and the only thing left to do was make it decaf.
Second , it had to be decaffeinated originally. Not only for freshness reasons, but also to reduce its carbon footprint as much as possible. Coffee is already a product that travels the world, and sometimes comes back, so any small element we can improve is a win.
Third , this had to be the best decaf we've ever had. While this decaf is the most we've ever paid for decaf, it's by far the best decaf we've ever had, so you get what you pay for.
The San Augustin and El Alto de Los Idolos
Around 1000 BC, a pre-Columbian civilization known as San Agustín flourished near the mountains where the Magdalena River flows into. The civilization mysteriously disappeared before the arrival of the Spanish conquerors. Little is known about what exactly happened, and the only thing left behind are the burial sites. These sites were discovered in 1960 by explorers, and the "El Alto de Los Idolos" archaeological park, which houses these burial sites, was founded.
Coffee producers in this region initially came together to share ideas and form groups to facilitate the sale of their coffees. The group has always been focused on quality, and members are currently working to standardize practices and improve their overall processes and drying patios. They have managed to significantly increase the quality of their coffee over time.
Un excellent décaf très équilibré avec une douce amertume. On y retrouve des notes briochés, beurrées et fruités, donc en accord avec les notes du torréfacteur. J'irais même faire un rapprochement avec les biscuits au beurre avec confiture au centre.
Bu en flat white, avec une tarte aux fraises du Québec, un accord parfait.
