Juan Jose Torres is a coffee producer from the Xinka indigenous community and a member of the Cafe Colis Resistencia. One of the most important aspects of coffee production for him is respecting the surrounding biodiversity.

This is our third year working with Juan Jose and we are extremely proud to represent this coffee which is absolutely delicious with notes of orange, honey and chocolate.

The Xinka indigenous community and Cafe Colis Resistencia

The Xinka are an indigenous group from the Mataquescuintla region whose existence is not recognized by the Guatemalan government.

In 2008, the opening of the Escobal Silver Mine was approved without the Xinka's permission, contrary to the United Nations Convention on the Rights of Indigenous Peoples. The mine threatens the cleanliness of the land, water, and air in their territory.

In 2003, the Xinka community formed the Cafe Colis Resistencia, a peaceful resistance movement that initially sought to gain recognition for their rights and now has the primary goal of blocking access to the mines. However, thanks to the resistance, the mine has been closed since 2017.

The development of the Escobal mine is supported by the Canadian company Pan American Silver, which claims on its website to build and operate mines responsibly.

Buying Juan Jose Torres' coffee is also a gesture of support for Cafe Colis Resistencia, which works to recognize the rights of the Xinkan community.

Recommended settings:

  • Amount of coffee in the cup: 16g of coffee per 250ml
  • Temperature: 200 F

Recommended settings for espresso:

  • Quantity of ground coffee: 18.5g
  • Amount of coffee in the cup: 37g
  • Extraction time: 30 seconds
