Luiz Paulo Dias Pereira Filho is a fourth generation coffee farmer. More than 30 varieties are harvested at Fazenda Santuario Sul, or “Sanctuary of the South.”

The SL-28 variety is considered to be of low productivity compared to other varieties, but the quality of this batch is convincing.

This coffee was fermented for 52 hours in stainless steel barrels with the inclusion of yeast until the desired pH level was reached.
